This is an artisan-made unpasteurised semicured Manchego wedge, weighing 250g. It is made using solely the milk of Manchega sheep, grazing the open grasslands of La Mancha. It has a Denomination of Origin from La Mancha as proof of its quality and provenance. The Manchego rounds, with their characteristic basket-weave pattern, are cured for a minimum of 4-5 months, giving the cheese its full rounded flavour.
